Flavors and Sizing
Because we are so often asked... A cake flavor is just that, the flavor of the cake, and the filling is spread in between the layers of cake. You may choose to use butter cream icing in between the layers, or choose a filling. For the most part, the basic cake flavors and fillings work well together and are fairly interchangeable. The more exotic cake flavors require more care with the fillings they are placed with.

Fondant and butter cream icing can also be flavored to complement the cake/filling you choose. Fondant is icing that is rolled out flat like dough and is then placed on the cake. A thin crumb coat of butter cream adheres the fondant to the outside of the cake. Fondant ultimately travels much better than butter cream. Because of this, we are unable to do an elaborate sculpted cake in butter cream due to it's delicate nature. We must do these in Fondant.

For a large cake, we recommend no more than two flavors. Wedding guests will want to try one of each flavor and you will go through more cake. Also, if you offer a sit-down dinner, plan on going through a little less cake. For a buffet style dinner/hors d’eouvres, plan on serving more. The rule of thumb is to have at least 1 piece of cake per gust for the bride's cake and make the groom's cake 1/3rd the size of the bride's cake. However, the good news is; much of the tradition associated with weddings and large events has fallen by the way side and anything goes these days! It's your event, do what you like.
